Public Entity Saba Announces Pricing for Butcher Station Services

After the successful introduction of formal butcher training on the island earlier this year, Public Entity Saba is pleased to announce the official pricing list for services provided at the butcher station, which can be viewed here: www.sabagov.nl/residents/agriculture-fisheries-animals/butcher-station. The services will be carried out by a professionally trained butcher, ensuring high standards of quality and consistency in service.

The butcher station will offer a wide range of services to the public, including:

1. Purchase of Animals by the Butcher Station
Owners of pigs, sheep, and goats may sell their animals to the butcher station, provided they meet the following criteria:

  • Organs must be present in the animal.
  • The animal will only be purchased if it passes inspection. The butcher determines whether the animal can be purchased or not.

    Reasons to not purchase the animals could include, but are not limited to:
    • The animal being too old or its meat too low in quality for processing.
    • The animal being too small/thin
    • The animal does not pass health inspection
       
  • If a seller has concerns about his animal passing inspection, he/she can contact the butcher to request a preliminary check at the farm
  • Animals must be well fleshed, and show no evidence of disease or infection. Producers of farmed/pended goats need to assure that if any medications have been administered during the animal's life, the proper drug withdrawal period has been honored.
  • Penned sheep and goats must be tagged, or the owner must provide convincing proof that the goat has been raised and kept in a pen.
  • Owners of penned sheep and goats must contact the butcher prior to bringing the animal. Depending on the situation, the butcher may request that the animal be brought live to the butcher station for slaughter.
  • Pig carcasses may be delivered with or without the head.

2. Slaughtering Services
For those who prefer to keep their animals for personal use, the butcher station also offers slaughtering services. These services will typically take place at the butcher station, but in certain cases, field slaughtering (by shooting) may be arranged, for example in cases where the animal is too large to be brought in alive.

3. Meat Cutting and Processing
For animals already slaughtered, the butcher station offers meat cutting services, with prices varying by the animal’s weight. In addition to this, the meat can then be processed into ground meat, hamburgers, or sausages for an extra fee.

4. Purchase of Goat and Pork Meat
Consumers can also buy a variety of cuts, including deboned goat meat, ground goat meat, pork ribs, ham, and pork chops. Prices will vary based on the size of the order, with discounted rates available for bulk orders exceeding 20 lbs. For smaller purchases, consumers can also visit Saba Greens (at Saba Reach) in The Bottom during weekdays.
